I just wanted to share with other pregnant moms out there that the FULL panel jeans are the BEST! Now, when I was pregnant with my daughter I for some reason only want maternity pants with the low waist band. However, at the end of my pregnancy all my maternity jeans were tight and low on my bladder. For some reason, all my other pants were fine but the jeans were just uncomfortable! Not like I didn't use the restroom a ton, it made me feel like I had to go all the time. So this time around, I purchased these jeans from Motherhood Maternity and LOVE them!!! So we are working our way towards potty training and thought we would start with the potty seat. My husband and I are not fans of a potty chair; just grosses us out really. :) A friend has this great seat at her house so we thought it was the BEST idea!

Yummy Cinnamon Rolls

Hard to believe these are from the Cooking Light Magazine! Very good!

18 servings (serving size: 1 roll)

Ingredients

  • Rolls:
  • 1 cup warm fat-free milk (100° to 110°)
  • 6 tablespoons melted butter, divided
  • 1/3 cup granulated sugar, divided
  • 1 package quick-rise yeast
  • 16.88 ounces all-purpose flour (about 3 3/4 cups)
  • 1 large egg, lightly beaten
  • 1/4 teaspoon salt
  • Cooking spray
  • 2/3 cup packed brown sugar
  • 1 1/2 tablespoons ground cinnamon

  • Icing:
  • 3 tablespoons butter, softened
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar

Preparation

1. To prepare rolls, combine milk, 3 tablespoons melted butter, 1 tablespoon granulated sugar, and yeast in a large bowl; let stand 5 minutes. Weigh or lightly spoon flour into dry measuring cups. Add egg and remaining granulated sugar to bowl. Stir in 4.5 ounces (1 cup) flour; let stand 10 minutes.

2. Add 11.25 ounces (about 2 1/2 cups) flour and salt to milk mixture; stir until a soft dough forms (dough will be sticky). Turn out onto a lightly floured surface. Knead until smooth and elastic (about 6 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands. Place dough in a large bowl coated with cooking spray; turn to coat top. Cover and let rise in a warm place (85°), free from drafts, 35 minutes or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.) Punch dough down; cover and let rise 35 minutes or until doubled in size. Punch dough down; cover and let rest 5 minutes.

3. Combine brown sugar and cinnamon. Turn dough out onto a lightly floured surface; roll dough into an 18 x 11–inch rectangle. Brush remaining 3 tablespoons melted butter over dough; sprinkle evenly with brown sugar mixture. Beginning at one long side, roll up dough tightly, jelly-roll fashion; pinch seam to seal (do not seal ends of roll). Cut dough into 18 (1-inch) slices. Arrange 9 slices, cut sides up, in each of 2 (8-inch) square baking dishes coated with cooking spray. Cover and let rise 35 minutes or until doubled in size.

4. Preheat oven to 350°.

5. Uncover rolls. Bake at 350° for 22 minutes or until lightly browned. Cool 10 minutes in dishes on a wire rack. Turn rolls out onto wire rack; cool 5 minutes. Turn rolls over.

6. To prepare icing, combine 3 tablespoons softened butter and cream; stir with a whisk. Stir in vanilla. Gradually add powdered sugar; stir until blended. Spread icing over rolls; serve warm.

Meal Planning

For the last two weeks we have been writing down our meals for the week.  This is one of the many things we do for our “budget”.  We get cash out for the week on Thursday nights, buy groceries, pay our babysitter and the rest of our weekly cash is for diapers, gas, and eating out.  This is to help us eat out less of course and be mindful of what we spend. So….purpose of this post; meal planning. 

I have always though ahead of what we will eat in the week but writing down has helped tons.  I don't just write down Dinner meals but I also have a list for Breakfast and Lunch.  When Randy is home and not traveling he works from home and eats lunch at home.  As a teacher I bring my lunch so this helps us both.  Actually Randy said he liked looking on the frig and seeing what there was to eat!!

Tips for saving money…

  • Of course like I mentioned, write out breakfast, lunch, and dinner meals for the week.  Post them on the frig for you and your spouse to read.  Think about what nights to you are home.  We are always at church on Wednesday nights so it is a nice break in cooking for us.  Plus Wednesday night suppers are reasonable at our church.  Writing out meals also saves you from wasting the fresh veggies and fruits that you forgot were in the frig!
  • When figuring out your meals, think about what you have in the freezer! Yes, the freezer.  Dig all the way in the back and see what is there. You might presently surprised! Well, I hope you are, it could be scary too.  I always buy meat on sale even if we don't need it and freeze it.  So there might be a week that I don't need meat at the store and see what I have in the freezer.  As well, pick a week to clean out the freezer and eat what you have. 
  • As well as the freezer, check out your pantry.  I am guilty of not checking what we have and buying more of it again.  So eat all of your many bags of rice, pasta, or canned foods for a while.  We enjoy making our own pizza sauce and pasta sauce with canned tomatoes.  I know that is always a staple in our house. 
  • Bring your lunch to work.  I love leftovers and look forward to my lunch at work when I have them.  Much better than a sandwich. 
  • Baking and Freezing. Just like my many other posts on baking, I love to freeze them for later! This is great for breakfast or snacks! My husband always says there are no snacks. Not true! Plus we get into our cereal rut and a great homemade muffin is a yummy change!
  • Coupons Coupons Coupons…I don't even think about heading to the store with out them.  Making sure to look for  the weekly ads as well!!

Pumpkins Pumpkins Everywhere!

It starting feel Fall…well maybe not here down south but I am sure somewhere it is!  I get excited for Fall when September hits and start thinking about everything pumpkins.  I haven't broken out my decorations yet, I think I will wait till October 1st I did bake everything pumpkin today.  

I call it my semi-homemade idea.  Being a full time wife, mommy, and teacher isn't easy.  When it comes to time, well I just have to make it.  So I always find ways to bake that are easy, cheap, and freezer friendly. 

First….

Betty Crocker Gingerbread Mix.

Follow directions but I also added 1 cup canned pumpkin and a 1 cup of flax seed meal

Second….

Betty Crocker Blueberry Muffin Mix (with canned blueberries)

Follow directions but I also added 1 cup canned pumpkin and a 1 cup of flax seed meal.

Third…had extra pumpkin left.

Hungry Jack’s Pancake Mix

Follow directions but I also added 1 cup canned pumpkin and a 1 cup of flax seed meal.

All cooked great and really tasted great. Best of all, I know there is something in there good for you that my little girl doesn't taste. Makes me not stress about the veggies!

Baby Yogurt

Thought I would share my thoughts on Baby Yogurt. Payton LOVES baby yogurt. I also love that she loves it. It is healthy, tasty, and easy.

Of course when it comes to my little girl I want nothing but the best. So organic it is. I don't mind saving in other areas of food so that my little girl can eat healthy. Plus if you look at various websites, you can always use coupons.

Stonyfield has great baby yogurt products all ages but especially for babies. They also are generous with their coupons. I always sign in under my husband’s email as well to get more coupons. We started with the plain yogurt and then added her baby fruit to the yogurt when she was 6 months old. After she got use to have her foods blended, we purchased the yogurt with fruit and cereal. And still do! She also loves the yogurt smoothies.

Horizon Dairy also has yogurt for babies. I usually don't find it at my grocery store but this weekend I saw their Little Blends Yogurt. Thought we would give it a try. Plus there was a coupon inside for next time. It is yogurt with fruit and veggies. We bought the banana and sweet potatoes. Yummy.

I know as a mom that I always worry about Payton having a balanced and healthy diet. To make it even harder she is picky about her veggies. Wont really eat them unless it is hidden. So I just make sure she eats a lot of fruit. Buying yogurt with fruit and now with fruit and veggies makes it a lot easier and less stressful!

Jamaican Curry Chicken

Tried a new recipe and LOVED it! I would say that this is totally family friendly because it isn't spicy at all. Now my little girl is super picky but hopefully your kids will enjoy it. Our neighbor and babysitter for our daughter is Jamaican. So where else do you think I got this recipe from? It is by word of mouth so I just winged and it turned out pretty tasty. I still don't think it is as good as Tammy’s but it was close! Thanks Tammy for the recipe!

1 package of chicken breast or bone-in chicken (your choice)

2-3 tablespoons Olive Oil

2-3 tablespoons of Curry powder

1 onion, diced

1 cup of water

2-3 servings of brown rice or whatever your family prefers

salt and pepper to taste

2-3 tablespoons of garlic (more if you really like garlic)

Medium heat cook minced garlic in olive oil till brown. Add curry powder to oil and mix. Add chicken breast and sauté on both sides. Add water to pan and cover with a lid. Cook chicken over low to medium heat till chicken is cooked. If you have time, low and slow is best for tender chicken. While chicken is cooking, cook brown rice and cut onions. Half way through the chicken, add onions to the pan, stir and cover. Let the steam cook down the onions. Can add more water if you think it needs it, it will reduce down to a curry sauce. Salt and pepper to taste.

When finished, serve curry chicken with rice and the sauce from the pan.

We had steamed carrots with ours and it was a good side dish.

Preschool Prep Company

I know it has been a while but with the summer ending and school starting back it has been busy! So I have a review for my readers. (dont even know if I have any! :))

A sweet DG sister/Blogger friend, Nikki suggested the Preschool Prep Company DVDs. They have colors, numbers, letters, and sight words. I thought this would great for Payton to try!

Check out their website! They have much more than just DVDs. So far we just have the letters and colors DVD. Being an educator I wanted to make sure they were going to be worth purchasing. Totally are!! Along with us working with her, her Leapfrog Fridge Phonics Letters, bath foam letters, and the DVDs, she is starting to recognize letters and colors. Of course I know she is only 17 months but she shows interest and tries her hardest. Right now she really likes the letters B, P, O, and R. Even when we are out, she points to letters and identifies them. Of course not always be correct but it is a start!

The DVDs are very repetitive, animated, and educate the kids on lower case and upper case letters and colors. It might drive the parents crazy but it keeps the interest of the kids!

I totally give my TWO thumbs up!

We purchased our DVDs at Sams Club and they had all of them there. I know Amazon carries them as well.

Peanut Butter Spread

This is such a great spread that I have made it three times this summer! The whole family will love it and it is a healthy way to feed your kids.

  • 1 Jar of Peanut Butter (we use all natural)
  • Optional Almond Butter ( we buy ours at the farmers market b/c it tends to be a little pricey)
  • Various nuts you have in the pantry (almonds, cashews, peanuts, ect) 1 cup or to taste
  • Jar of Nutella
  • 1/2 cup Honey
  • 1 cup Flax Seed

Grind your nuts in the food processor. Add all your butters, ground nuts, nutella, honey, and flax seed together. Taste it and see if you need to add any of the ingredients. Place in a jar and store in refrigerator.

We eat it on toast and crackers!

Summer Book Suggestions (girls only)

Since I have the time this summer, I have been reading away! I know it should be a year round thing but it just doesnt happen. Thought I would share my summer readings.

Okay, dont judge. I read her other book last summer and watch her show on Oxygen. So I read this one. It was a fun, mindless read.

I really want to see the movie so I read the book. I havent seen the movie yet because I know that I will be crying mess! Good book!

Currently reading this!! It is fun and love that she blogs about her recipes!

Just came out this week and I am totally excited about it!! Love this author. If you are looking for a fun summer, relaxing, and great book ALL of her books have been awesome!

Here are her other books! Read them all and love them!

Most important, my bible study book; Crazy Love. I have been reading in between all my others. We are doing a class on it and the author is very powerful about how to pray. Very powerful and though provoking.

Chicken Pesto Pizza

Thought I might share my yummy recipe for Chicken Pesto Pizza!!

Homemade Pesto from our garden. Yes really. I love making pesto and then freezing it for when we need it.  I am determined to make enough this summer to last us to next summer. Okay, enough of the chat onto the recipe…

Pesto

  • 2 cups of basil (you can also add arugula if you want)
  • 3-4 cloves of garlic (add more to taste)
  • 1 cup walnuts, pine nuts, almonds, sunflower seeds or any other nuts that you have on hand.  I rarely use pine nuts due to other nuts being less expensive.
  • 1 cup of olive oil or until the consistency you like.
  • 1 /2 cup parmesan cheese ( If you freeze, I wait and add it when I cook. That way it is fresh)

Use a food processor and chop up the nuts and basil together.  Add garlic and parmesan cheese.  Then add olive oil as the food processor  is running and stop when you like the consistency.  Add salt and pepper to taste. 

If you freeze: Place in ziplock containers (we use the small ones) and place in freezer!!!

Preparing the Pizza Preheat oven 400 degrees F

  1. Pizza Crust: We use premade farmer’s market whole wheat pizza dough; of course we buy it and freeze them  for when we need it.  As well you can buy premade dough from the grocery store.
  2. Thaw out or use your fresh pesto from your garden.  Spread out on the pizza crust.  Don't put on too thick because the olive oil will thin out. 
  3. Add chicken (already cooked in a little olive oil). 
  4. Optional: I made one with just chicken for my husband.  Made another one with artichoke hearts, tomatoes, and chicken. yummy.
  5. Spread mozzarella cheese over top
  6. Place on a pizza stone (if you have one) and bake for 15 minutes or until the cheese has browned.

Blueberry Lemon Muffins

I love this recipe!!! I make in bulk and freeze it for Payton.  It is full of yummy goodness and healthy goodness~ perfect my little picky eater.  I have altered a few things in the recipe just because I wanted to or just because i may not have had that particular item.  Either way, they have always turned out yummy! I will put my alternative ingredients in bold.

If you haven't heard of Deceptively Delicious, it is a must for moms out there!  Jessica Seinfeld is all about hiding the veggies into recipes for your picky eaters.  My little girl is really picky and does not care for veggies unless they are hidden.   Jessica suggests taking a day and pureeing the vegetables that you will use and then freezing them in the appropriate proportions.  It works great.  As well the cookbook has really good recipes that are enjoyed by all!  Next time, I will post the recipe for coffee cake, it is so yummy. I freeze it and bring out for guests and they think I slaved away that morning! Okay, I digress. Sorry.

Prep: 10 Minutes Total: 26 Minutes - Makes 12 Muffins - Packable

  • Nonstick cooking spray
  • 1/2 cup firmly packed light or dark brown sugar
  • 4 tablespoons trans-fat-free soft tub margarine spread, chilled (used the light margarine as well) 
  • 1 cup low-fat lemon yogurt (used any flavor we have had available and also whole milk yogurt for Payton)
  • 1 cup blueberries
  • 1/2 cup yellow squash puree
  • 1 large egg
  • 2 teaspoons pure lemon extract
  • 1 teaspoon grated lemon zest
  • 2 cups all-purpose flour (whole wheat flour)
  • 1/4 cup flaxseed meal
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

1. Preheat the oven to 350 F.  Coat a 12-cup muffin tin with cooking spray or line with paper baking cups.  (I have used the mini muffin tins for Payton and they make a great size for snacks or a side item)

2. In a large bowl, beat the sugar and the margarine with a wooden spoon.  Stir in yogurt, blueberries, yellow squash puree, egg, lemon extract, and lemon zest.

3. Add the flour, flaxseed meal, baking powder, baking soda, and salt.  Stir in to combine, do not over mix- the batter is supposed to be lumpy.

4. Divide the batter among the muffin cups. Bake until the tops of the muffins are lightly browned and a toothpick comes out clean when inserted in the center, 13-16 minutes.  Turn the muffins onto a rack to cool.

5. Store in an airtight container at room temperature for up to 2 days or wrap individually and freeze up to one month. 

Got Greek?

I tried this yogurt for the first time this past week and it was Yummy!!! I heard a lot about how healthy it is and how tasty it is.  I tried the fat free yogurt and it was very creamy and full of lots of flavor.  Plus it is organic, even better. 

Why yogurt in general?

Head to Oikos Organic for coupons.  It is a little more expensive than store brand yogurt but it is totally worth the extra expense.  Just remember to use that coupon when the yogurt goes on sale! As well the expiration date is longer on organic yogurt so stock up when you find great deals. 

Kid friendly?

Luckly yogurt is staple for my little toddler. She usually gets full fat yogurt and they do sell Greek Yogurt in “whole milk”.  I put the greek yogurt with apples and strawberries yesterday and she loved it!! Plus she isnt a huge fan of apples and strawberries, so the yummy creamy greek yogurt helped convince her that it was all yummy! :)

As well I bake a lot of yummy and healthy breads that call for yogurt for Payton. Next time, I will be using Greek Yogurt for extra flavor! (more posts on baking to come)

Twisted Oatmeal Raisin MckCookies

Got this recipe from MyCharmingKids.net . I made them the other day and they were YUMMY!!! As well, nutritious for your little ones and you of course. When I made them, I didn't have any raisins so I used dried cranberries and substituted whole wheat flour for the regular flour. Wouldn't even know there is whole wheat flour in them at all.

I am going to start posting more “Kid Friendly Recipes” as well as just healthy recipes that our family enjoys. I am all about sneaking in veggies and healthy nutrients into foods for my little girl. She doesn't eat any veggies that is visible. Oh well, there is more to stress about in life. :)

Twisted Oatmeal Raisin MckCookies
3/4 c butter
1 c packed brown sugar
1/2 c raw sugar
1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp ground cinnamon
1/2 c flaxseed meal
2 eggs
1 tsp vanilla
1 T molasses
1/2 c raisins
1 1/2 c flour
2 c rolled oats
In a large mixing bowl, beat butter with a mixer for 30 seconds. Add brown sugar, raw sugar, baking powder, baking soda and cinnamon. Beat until combined. Beat in the eggs, vanilla and molasses. Beat in the flour. Stir in the oats, flaxseed meal and raisins.
Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Sprinkle raw sugar on top. Press down gently with the tines of a fork. Bake in a 375 degree oven for 10 to 12 minutes, or until edges are golden. Cool on a wire rack.

The word every woman hates to hear…

WORKING OUT!

If you love working out, then I am sure this post will be old news to you.

Truth is…I have a love/hate relationship with working out. I have always been one to workout, be healthy, and strive to be “in shape”. Now dont get me wrong, I might always strive to be healthy and “in shape” but God didnt bless me with the “skinny” genes! I have to work hard to maintain my shape and size and so this is why I have a love/hate relationship with working out.

Then I had a baby…oh how your body changes after pregnancy. As well, God didnt bless me with the “bounce back to the normal body and never looked like you had a baby in two months genes”. So I have had to work hard to loose the last 15 lbs that I probably shouldnt have gained to begin with the hard way, working out and dieting! Ouch!

The gym didnt work for me and my family due to time and a traveling husband. The only time I had to head to the gym was after work and then I would be getting home after 5pm and my sweet little one heads to bed at 7pm. Plus, I am not a fan of the gym nursery. So what’s a mama to do?

Order workout videos!

LOVE this workout video set!!!

It comes with 10 minutes of cardio, yoga, upper body, total body, and abs. Believe me, this will kick your butt! Obviously to get best results is to do three 10 minutes videos but if you dont have time, just do one or two! During the school year, I wake up at 5:30am (yes its the only time) and complete this work out in just 30 minutes and then off to shower and get ready for the day. It might suck waking up early but I feel so much better when I am done. Plus I dont have think about working out all day long.

Other videos I have and enjoy every once in a while.

These are great to rotate and even though you might think they are silly, it really is a great workout!

Gotta love some Billy Blanks. We use to do this workout in our dorm room in college!

A while back our dvd player broke so I used Comcast On Demand. There were some good workout videos on there!

Last but not least, I LOVE using our jogger stroller and taking Payton for a walk in our neighborhood and parks. This mama is NOT a runner. Pushing the stroller in a hilly neighborhood is enough for me.

Must haves for Moms

I am sure there tons out there that us moms think we must have. Purses, bags, wallets, pedicures ect. However I was thinking of useful items that might make our lives a little easier. Please feel free to comment on items that might make your life a little easier when it comes to being a mom. I am sure I will have other posts to come as I find items that I want to share with you. :)

Currently this items helps me a ton and for my little girl to be the independent toddler she so wants to be…

The Snack Trap

This great little snack holder is great because toddlers can use it, walk around, and it doesn't spill! I also love this great item because it keeps from our dog Otis eating all of Payton’s snack. Now that doesn't always stop Payton from feeding her snack to Otis. :) Plus it is great for car rides.

We purchased our Snack Trap at Babies R Us or you can purchase it online at the Snack Trap store or One step ahead.

They due sell the lids separate. Wasn't sure why but I have figured out the lid seems to loose its “firmness” after washes and uses. My only suggestion is that the snack trap doesn't work well with small snacks such as cheerios and baby gold fish. They tend to fall out of the container! Otherwise, it is a must have.

These bottle caps are great because they fit on water bottles for your little one to use when your are out and about. I purchased the pack of three where each bottle cap fits various types of water or juice bottles out there on the market. Dont worry, it tells you which one goes with what. :)

The only thing to watch out for…it isnt leak proof. If your little toddler is like mine, when they squeeze it, water will come out! However, it wont leak if just turned upside down. We enjoy using this on walks in the jogger stroller, road trips, or just to have the bottle cap in the bag for that just incase moment.

The joys of purchasing diapers and wipes…

Are there joys in purchasing diapers and wipes? Really? Let me know if you enjoy this purchase. The only way I get joy in purchasing diapers and wipes is when they are on sale and when I have coupons!

When my daughter was born I thought huggies or pampers were the only way to go when using diapers and wipes. I usually dont care about name brand items. (total publix or kroger brand girl here) However when it came to my little girl’s sensitive little hinny, all I wanted was the best! Then came the prices! Gees there was such a huge difference in prices when looking at huggies or pampers versus all the others. So then came my husband with his blackberry figuring out what brand had the best price. No joke, he would be calculating in the store! Got to love how men think. :)

Then came the quality test…

You want the best diaper for quality and price, right?

In our household we use…

This is the BEST price and BEST quality diapers we know that work for us. Where we live you can find them at Target and Wal-Mart. The coupons for Luvs are few and far between (probably because they know they are already cheap). However look out for your weekly coupons in the paper because at times they do come in there. As well, if you shop at Target, when you get your receipt, you always get a store coupon. At times they are $1 off Luvs diapers!

The diapers we have tried….

I do purchase these when they are on sale and I have a coupon to match with it! I have no complaints other than price. :) Also Babies r us has good sales on these with a coupon if you don't mind purchasing in bulk.

I havent tried these since Payton was really little but they just didnt feel that great. I know that I wouldn't want them on my bottom. Plus they are the same price as Luvs and Luvs’ quality is better!

Lets just say we had TOO many blow outs in the Babies R Us brand diapers! I even read in a baby book to try these diapers because of quality and price. After we had to clean up too many poopy messes, these diapers became “pee” diapers ONLY.

We just tried the Publix brand diapers because I had a $5 dollars off. Couldnt beat the price. They are good for the price but still doesnt beat LUVS!

Cant forget the wipes! Yes, my husband had also figured out the wipe to cent ratio. Even if I didnt purchase our usual brand, he would ask me if they were the same price per wipe!

The refill packs are great for the pop-up containers and the they are soft and cheap!

AND

Great quality and cheap. Did I mention that I like Publix?

Also if there is a Publix near you, join the Baby Club and they send you coupons! Love it!

Welcome!!

Welcome to the Sassy Mama!! I thought it would be fun to create a blog dedicated to just helping out families relating to ALL THINGS related to parenting. I am always wanting to know about good deals, what works, what doesn't work, where to get the best price for things, and new and improved products that help out parents!! I was telling a friend about something that I purchased for my daughter and she responded with "you put those ideas on your blog". What a great idea! So this is how "The Sassy Mama" was created.

I promise you that I am not a perfect mama and I try each and everyday to be a great mother to my little girl. My husband and I both know that each and every day we are blessed by God to have our little girl in our lives and we learn something new all the time! We are defiantly money savers and always are trying to find what places have the best deals and always shop around for "big" purchase items. I hope to offer good suggestions relating to baby items to toddler items. As well as things that relating to having a family!! As my little girl grows (she is 14 months) I will share with you things that might have worked for us or things that haven't worked for us! I hope to have this site has a open line of communication and let me know if there is something out there better for parents to share!
